i had a reeeeally long day today..spent the 6 hrs i was at work running around like crazy trying to slap together some major shit for the easter window display which involved doing a lot of painting and measuring and moving stuff around, very manual labor type stuff which is not what i normally do so it wore me out for sure. after i walked to the grocery store because i had a craving for borscht, managed to fit all the groceries in 1 bag after stuffing my backpack with potatoes and a cabbage (on top of all the other things in there), then ended up having to walk all the way to bart which took like a good 15m..
i wait for bart, wait for the other bus home, get home and my roomate is there and we chat for a bit so i didn’t get to start my soup right away..finally get things rolling and while the veggies are cooking up i wash a sinkful of dishes that had been there for a while, and clean out a couple shelves in the pantry of old stale stuff. eventually the soup cooks down enough, i pan fry up a nice kielbasa in some butter real quick, and now here i am finally eating dinner after getting off work at 7:15 tonight.
basically i just wanted to share my soup with you cause i hadn’t ever made borscht before and although i’m sure it isn’t 100% “traditional” it tastes pretty fucking awesome, especially with some sour cream stirred in. i used ~this~ recipe w/some small changes….added more beets, olive oil instead of butter, no caraway seeds used coriander and paprika instead, no celery, no dill (wish i had some though), 2 carrots, and a can of diced tomatoes in juice instead of puree.
